try these recipes Lean and green Lighten up with fresh sides and salads Strawberry Spinach Salad Ingredients • 2 tablespoons sesame seeds • 1 tablespoon poppy seeds • 1/2 cup white sugar • 1/2 cup olive oil • 1/4 cup distilled white vinegar • 1/4 teaspoon paprika • 1/4 teaspoon Worcestershire sauce • 1 tablespoon minced onion • 10 ounces fresh spinach - rinsed, dried and torn into bite- size pieces • 1 quart strawberries - cleaned, hulled and sliced • 1/4 cup almonds, blanched and slivered Directions 1. In a medium bowl, whisk together the sesame seeds, poppy seeds, sugar, olive oil, vinegar, paprika, Worcestershire sauce and onion. Cover, and chill for one hour. 2. In a large bowl, combine the spinach, strawberries and almonds. Pour dressing over salad, and toss. Refrigerate 10 to 15 minutes before serving. Green Bean and Potato Salad Ingredients • 1 1/2 pounds red potatoes • 3/4 pound fresh green beans, trimmed and snapped • 1/4 cup chopped fresh basil • 1 small red onion, chopped • salt and pepper to taste • 1/4 cup balsamic vinegar • 2 tablespoons Dijon mustard • 2 tablespoons fresh lemon juice • 1 clove garlic, minced • 1 dash Worcestershire sauce • 1/2 cup extra virgin olive oil Directions 1. Place the potatoes in a large pot, and fill with about 1 inch of water. Bring to a boil, and cook for about 15 minutes, or until potatoes are tender. Throw in the green beans to steam after the first 10 minutes. Drain, cool, and cut potatoes into quarters. Transfer to a large bowl, and toss with fresh basil, red onion, salt and pepper. Set aside. 2. In a medium bowl, whisk together the balsamic vinegar, mustard, lemon juice, garlic, Worcestershire sauce and olive oil. Pour over the salad, and stir to coat. Taste and season with additional salt and pepper if needed. Roasted Asparagus Salad with Feta Cheese Ingredients • 1 bunch fresh asparagus, trimmed and cut into bite-size pieces • 2 tablespoons olive oil • 1 pinch garlic powder, or to taste • 4 cups lettuce leaves, cut into bite-size pieces • 1 cup grape tomatoes, halved • 1/2 cup crumbled feta cheese Directions 1. Preheat oven to 400 degrees F (200 degrees C). 2. Place asparagus in a large bowl. Drizzle olive oil over asparagus and season with garlic powder; toss well. Transfer asparagus to a baking sheet. 3. Bake in the preheated oven until asparagus are tender, about 20 minutes. 4. Place lettuce in the same bowl used for asparagus; top with tomatoes, feta cheese, and asparagus. 44 What's up! april 7 - 13, 2019
