He is awaiting A school to start in Mississippi. Mark Cowan Navy Seaman Recruit Mark J. Cowan, son of Sherry M. and Donald J. Cowan of Red Bluff, recently completed U.S. Navy basic training at Recruit Training Com- mand, Great Lakes, Ill. During the eight- week program, Cowan completed a variety of training which included classroom study and practical instruction on naval customs, first aid, firefighting, water safe- ty and survival, and shipboard and aircraft safety. An emphasis was also placed on physical fitness. The capstone event of boot camp is "Battle Stations". This exercise Sewell gives recruits the skills and confidence they need to succeed in the fleet. "Battle Stations" is designed to galvanize the basic warrior attrib- utes of sacrifice, dedi- cation, teamwork and endurance in each recruit through the practical application of basic Navy skills and the core values of Honor, Courage and Commitment. Its dis- tinctly ''Navy'' flavor was designed to take into account what it means to be a Sailor. Cowan is a 2004 graduate of Red Bluff High School of Red Bluff. Top loin in red wine sauce Top loin steaks with red wine sauce from Confident Cooking with Beef. 2 boneless beef top loin (strip) steaks, cut 1 inch thick or beef shoulder top blade steaks (flat iron) about 8 ounces each 1 teaspoon lemon pepper chopped fresh parsley — option- al Red wine sauce: 1 tablespoon olive oil 1 cup sliced cremini or button mushrooms 2 cloves garlic, minced 1/2 cup dry red wine 1/3 cup ready to serve beef broth 1/3 cup whipping cream 1/4 teaspoon ground black pep- per salt Press lemon pepper evenly onto beef steaks. Heat large nonstick skillet over medium heat until hot. Place steaks in skillet; cook top loin steaks 12 to 15 minutes (shoulder top blade steaks 13 to 15 minutes) for medium rare to medium done- ness, turning occasionally. Remove to platter; keep warm. To prepare red wine sauce, add oil to same skillet and heat over medium heat until hot.
