Learn to provide CPR for an adult, child and infant, and use an automated external defib- rillator. This program is designed to give you the confidence to respond in an emergency situation with skills that can save a life and is offered 5-7 p.m. May 12 for $43 at City Hall. Lifeguard training This lifeguard training course covers the skills and knowledge required for effective lifeguarding at swimming pools as is open to those 15 and older. It will complete the CPR recertification. The fee includes the cost of books and equip- ment. The course is scheduled for 8 a.m. to 6 p.m. May 22-23 or May 29-30 for $140 at Corning City Pool. Country-fried steaks This recipe for country-fried steaks comes from Confident Cook- ing with Beef. 4 beef cubed steaks about 4 ounces each 1 large egg, slightly beaten 3 tablespoons milk 1/3 cup flour 1/2 teaspoon salt 1/4 teaspoon ground black pep- per 2 tablespoons vegetable oil Gravy: 1 tablespoon vegetable oil 1 tablespoon flour 1 cup milk 1/4 teaspoon salt 1/4 teaspoon ground black pep- per 1/8 teaspoon ground red pepper 1. Beat egg and milk in shal- low dish until blended. Combine flour, salt and black pepper in sec- ond shallow dish. Dip each beef steak into egg mixture, then into flour mixture turning to coat both sides. 2. Heat 1 tablespoon oil in large nonstick skillet over medium to medium-high heat until hot. Remove steaks, keep warm. Repeat with remaining 1 table- spoon oil and steaks, adjusting heat as necessary to avoid over brown- ing. 3. To prepare gravy, heat oil in same skillet over medium heat, scraping up any browned bits. Add flour; cook and stir 1 minute. Grad- ually stir in milk; cook and stir 2-3 minutes or until thickened. Stir in salt, black and red peppers. 4. Serve steaks with gravy. Total preparation and cooking time: 25-30 minutes. Four servings. On Friday, Bob and Pearl Divine of Red Bluff dropped by the park to meet the group and find out what it does on campouts. Bob played horseshoes with the men and Pearl visited with the women. They hope to be able to join us for our next campout. Trailbosses were Jack and Bonnie Love and she dec- orated the hall in the Easter theme and provided Easter cups of candy. Richard Sol's granddaughter, Dasia, enjoyed the campout with the group, which had a potluck dinner Saturday night. May 14-16 the group will be going to Doney Creek Lakeshore Villa in Lakehead.
