French Onion Beef Sandwich This recipe for French Onion Beef Sandwiches Au Jus is from Beef Pot Roasting 101. 1 boneless beef roast, such as round rump, round tip, bottom round or brisket flat half (3 to 4 pounds cooked 2-1/2 to 3-1/4 hours) or a boneless chuck shoulder pot roast (2-1/2 to 4 pounds cooked 2 to 3 hours or until fork-tender) 2 tablespoons oil 2 large sweet onions, cut into 1/4 inch thick slices 2 cups water 1/2 cup reduced sodium or regular soy sauce 1 package (1-1/4 ounces) dry onion soup mix 1 large clove garlic, minced 8-10 French rolls, split, toasted 1 cup shredded Swiss cheese 1. Heat oil in stockpot over medium heat until hot. Place beef roast in stockpot, brown evenly. Remove roast from stockpot. 2. Add onions to stock pot, cook 8 to 10 minutes or until tender and lightly browned, stirring occasionally. Add water, soy sauce, soup mix and garlic. Homesteader Missing From Hooker Region Young Jack Johnson, the name known by a colored man about 35 years of age, is missing from his accustomed haunts in the Hooker district and speculation is rife among his neighbors as to what may have become of him. For some time he has been living on a homestead four miles west of Hooker, and as he had no well on his place frequently called on others of the neighborhood for drinking water. — Jan. 9, 1923 demonstration with several interested women and children in the audience.
