Rum Balls Caramel Corn Yield: about 60 Ingredients: 1 stick unsalted butter 1/2 cup powdered sugar 3/4 cup chocolate chips 2 eggs, beaten pinch of salt 1 3/4 cups vanilla wafer cookie crumbs 1/2 cup finely chopped walnuts 1/4 cup dark rum 1 1/2 cups unsweetened grated coconut Ingredients: 6-8 quarts of popcorn, popped coating: 2 cups brown sugar 2 sticks butter or margarine, melted �� cup corn syrup �� tsp. salt In a medium saucepan over mediumlow heat, combine the butter, sugar and chocolate chips. Stir constantly until fully melted and smooth. Slowly whisk in the eggs until fully incorporated. Remove the pan from heat, stir in the salt, cookie crumbs, walnuts and rum. Allow the pan to cool, then cover with plastic wrap, pressing the wrap directly onto the surface of the chocolate mixture. Chill for 6 hours, or overnight. Place the coconut in a medium mixing bowl. Scoop out 1/2 teaspoon of the chocolate mixture and roll into a ball. Toss the ball in the coconut to coat, then place on waxed paper. Repeat, refrigerating the balls in batches as you proceed. Should be stored in the refrigerator, but bring to room temperature before serving. Bring coating to a boil and then boil for 5 minutes longer. Remove from heat, add �� tsp. baking soda and 1 tsp. vanilla. Stir. Pour over popped corn and stir until coated. Put coated popcorn in a large pan and bake at 200 degrees for one hour, stirring every 15 minutes. Cool and store in airtight containers. Chocolate Truffles (yields 2 lbs of truffles) 2 lbs of good quality chocolate 1 quart of heavy cream 1/4 lb of unsalted butter 1/3 cup of liqueur, your choice Melt the chocolate and cream in a double boiler, remove from heat. Whisk in butter and liqueur. Continue to whisk as the mixture cools and thickens. Pour into quart-sized containers and refrigerate. To serve, scoop out with a melon baller and roll in powdered cocoa.
