42 www.DesertMessenger.com January 3, 2018 Nancy's Kitchen CABBAGE ROLLS (Makes about six servings) 12 cabbage leaves 1 cup cooked white rice (cook in beef broth for added fl avor) 1 egg, beaten 1/4 cup milk 1/2 cup minced onion 1 pound extra-lean meat, half ground beef and half ground pork 1 1/4 teaspoons salt 1 teaspoon pepper 1/4 teaspoon garlic powder 2 8-ounce cans tomato sauce 1 14.5-ounce can diced or crushed tomatoes, with liquid 1 tablespoon brown sugar 1 1/2 tablespoon lemon juice 1 tablespoon Worcestershire sauce First, steam the entire head of cab- bage in a pot of boiling water, mak- ing sure to cut off the core fi rst. Let the cabbage head boil for about 6-8 minutes -- if you notice leaves sepa- rating from the head, you can gently peel away the softened leaves with a long fork. Drain the head of cab- bage and peel the necessary amount of leaves when cool. Grab a large bowl and combine the rice, egg, milk, onion, garlic powder, ground beef, ground pork, salt, and pepper. Scoop about a 1/4 cup of this mixture into the center of each cabbage leaf and roll them up, making sure to tuck in the ends. If you'd like to slow cook them, place the rolls in the slow cooker. If you'd like to bake them, place them in a lightly greased 9x13 baking dish. If you are using the oven, pre- heat it to 350 degrees F. In a separate bowl, mix together the tomato sauce, diced tomatoes, brown sugar, lemon juice, and Worcestershire sauce. Pour the sauce over the cabbage rolls. If using the slow cooker, cover and cook on low for 8 to 9 hours. If using the oven, cover with foil and bake for 1 hour at 350 degrees F. By Herbmama The immune system helps your body fi ght off viruses, infections, disease & all sorts of illnesses. In my opinion, the key to optimal health is a top notch immune system. Most, if not all, disease starts in the gut because over 75% of your immune system is found in the digestive tract. Some foods or spices that help the immunity system lines are shiitake & reishi mushrooms, tur- meric, onions, lemon, garlic, ginger. It takes time to build up the immune system to where you don't get sick, so be consistent & patient! Try to cut down on sugar too, it affects the immune system in more ways than one could ever imagine. You've got to have lots of the good bacteria to help move things along & fi ght disease in your gut. Probiotics is all the rage now and it is good for overall health. The best way to get those is through fermented foods, raw foods, kefi r and the like. Many try the probiotic pills and sometimes those don't get through the small intestine where all the acids are to be able to get to the large intestine where the probi- otics need to be. Vitamin C is vital to our total health, though recent research says it's made from corn, which is probably GMO. Vitamin C is water soluble and whatever your body don't use, it will get rid of it & because it is water soluble, you need to replenish it every day. Bee pollen is one of the top super foods and has an antimicrobial effect on the body. It also helps people with allergies & helps to strengthen the immune system as does honey & it's best to obtain the pollen or honey from a local source, as this increases its antial- lergenic properties. Herbal immune system builders not only help your body to ward off illness, but they can also teach it how to operate better. Along that line, we have echinacea, astragalus, licorice, bupleurum, Chinese skullcap, Siberian gin- seng, ashwaganda, shizandra, cat's claw, goldenseal & essiac. Many of these are adaptogens which helps the body wherever the need is, helps to build the immune system & counter the effects of stress. Elderberry is a berry & can be used specifi cally for viral infections and the fl u. Elderberry inhibits the ability of a virus to break out and make copies of itself. It stimulates white blood cell production which is similar to Echinacea and it's rich in bio-fl avinoids & provides excellent antioxidant activity. There's so many different ways to help build up your immune system, some of them are rather tasty, others…well….not so tasty, but for your body to run at it's peak performance it is necessary to make sure you re-enforce & build up that immune system! There are so many reasons it can be compromised nowadays. This information is for educational purposes only. It is not intended to cure or treat any type of illness or disease.
