I'm going to concentrate on breakfast this week. The cookbook features great recipes under the general title of Biscuits & Breakfast. The first recipe I'm going to make is from CYNTHIA HEFFNER. She offers Cream Dill Biscuits. 2 cups self-rising flour; 1 tablespoon baking powder; 1/2 teaspoon salt; 3 tablespoons fresh dill or rosemary, parsley, shredded cheese; 1 1/4 cups heavy cream. Mix together all ingredients. Knead on floured sur- face and roll out thick and cut into biscuits. Bake at 425º for 12 to 15 minutes. A tasty herbal biscuit. Cream Dill Biscuits Fancy French Toast JENNIFER LANDIS gives us her recipe for Fancy French Toast. French loaf, cut in 1 inch thick slices; 1 large can evaporated milk; 2 cups milk; 6 eggs, beaten; 1 tablespoon vanilla; 8 ounce cream cheese; orange marmalade. Spread cream cheese and teaspoon of marmalade on one slice of bread. Place another slice of bread on top to make a sand- wich; Dip "sandwiches" in milk mixture to coat both sides. Fry in medium hot pan with oil and butter until both sides are golden brown. Serve with maple syrup and powdered sugar. Great with bacon and orange juice. I really liked this and so did my guests. So, try it! Indian Fry Bread Here's something very simple. SHELIA PIERCY shares her recipe for Indian Fry Bread. 2 1/4 cups plain flour; 1 1/2 teaspoons baking powder; 3/4 cup, plus 1 tablespoon warm milk; hot oil for frying. Knead brad for 3 or 4 minutes. Let rest for 30 min- utes. Pinch off portion and roll in 6 inch circle. Drop in 11/2 inch deep hot oil. When golden brown, drain on paper towel. I like it with powdered sugar on top. Boy and Girl Scouts like to make this recipe. Egg Cornbread If you like cornbread, here is a quick and simple rec- ipe. Egg Cornbread! 2 cups Tenda-Bake self-rising corn meal; 2 cups cold milk; 1/2 cup melted short- ening; 2 unbeaten eggs. Add milk, shortening, and eggs to corn meal and mix thoroughly. Pour into greased shallow pan for good browning and bake in 425º oven for 40 minutes. How quick can you make this? Frankly, I was surprised because I thought it was too easy. However, I'm a convert.
