Off my cookbook shelf comes "Forward By Faith" from Bethel Baptist Church in Ellenboro. Butterscotch Pie Let's go to the kitchen and start by making CALLIE W. WRIGHT'S first ever pie she baked back in 1935, Butterscotch Pie! 1 cup brown sugar; 4 tablespoons cream; 3 tablespoons shortening; 1 cup milk; 6 tablespoons flour; 1 egg yolk. Cook sugar, cream and shortening until brown and thick. To this add milk, flour and egg yolk. Mix, stirring constantly, until thick. Pour into baked pie shell. Simple enough! Chocolate Fudge Pie This recipe, according to PAT BLALOCK is "easy as pie!" She shares her recipe for Chocolate Fudge Pie. 1 1/2 cup sugar; 4 tablespoons cocoa; 1 tablespoon plain flour; 2 eggs; 1 stick butter, melted; 1 tea- spoon vanilla; 1 small can evaporated milk. Mix in order of ingredients. Pour into uncooked pie shell. Bake at 350º for 35 minutes. This will fill one deep dish pie crust. Use a wire whisk when making. Crustless Egg Custard If you are watching your weight, try this recipe. It's RUBY HAMRICK'S mother's recipe for Crustless Egg Custard! It makes two and is good for you! 4 eggs; 2 cups sugar; 1/2 cup self-rising flour; 1 stick but- ter; 2 cups sweet milk; 1 teaspoon vanilla flavoring. Mix ingredients together. Put into two pie dishes or pans. Bake at 350º for 45 minutes. If using glass pans, reduce temperature to 325º. Apple Crisp A family favorite is Apple Crisp. A bowl of ice cream topped with this is always welcomed at my house. JOYCE MC FARLAND shares her recipe with us. I like it with or without ice cream. I also like it with some hoop cheese on the side! 4 cups apples, peeled and diced; 1/4 cup water; 3/4 cup flour; 1 cup sugar; 1 teaspoon cinnamon; 1/4 teaspoon salt; 1 stick margarine or butter (I always use butter). Place apples and water in baking dish. Sift flour, sugar, cinnamon and salt in a bowl. Cut butter or margarine until mixture resembles coarse crumbs. Sprinkle over apples. Bake in 350º oven for 40 minutes or until apples are tender. This is a recipe that you want to definitely keep. I have also made it adding some golden raisins or even dried cranberries. It's very good! Easy Chocolate Ice Cream ANN MANN gives us a recipe that she says tastes like Wendy's Frosty! Well, believe it or not, it does. So, you can be a hit with the kids this summer by making this - Easy Chocolate Ice Cream! 1/2 gallon whole chocolate milk; 1 large tub Cool Whip, thawed; 1 can sweetened condensed milk; 1 tablespoon vanilla extract; dash of salt. Mix all ingredients together. Pour into ice cream freezer and chill until ready to freeze. This is a good make ahead recipe. There you have it for this week.
