Rutherford Weekly Cooking By Allison Flynn Baked Spaghetti & Meatballs Meatballs, homemade or frozen 1 (24-ounce) jar spaghetti sauce ½ yellow onion (diced) 3 cloves garlic (crushed) 1 tsp Italian seasoning 2 TBSP olive oil spaghetti noodles 1-2 cups grated cheese ½ cup grated parmesan In large cast iron skillet, sauté onions in olive oil over med/low heat. Add in garlic and continue sautéing until onions are tender. Add meatballs. Add sauce and tsp Italian seasoning. Heat over med/low heat for about 20-30 minutes. In separate large pot, cook spaghetti noodles according to package directions (under cook by 2 minutes). With large slotted spoon, scoop meat- balls from sauce and set aside. Scoop cooked spaghetti (with large slotted spoon) into marinara sauce. Add in about ½ cup pasta cooking water. Gently stir until pasta is fully coated with sauce. Add meatballs to top of spaghetti. Top with grated cheese & parmesan cheese. Bake at 350* for approx 20-30 minutes or until hot and bubbly and cheese is melted. Slow Cooker Spaghetti & Meatballs 1 (16 ounces) box spaghetti 1 (24 ounce) jar spaghetti sauce 4 cups water (vegetable or beef broth) 26 ounces (24 count) frozen meatballs Optional sauce ingredients: 1 1/2 tsp. Italian seasoning 1 1/2 tsp. minced garlic 1 1/2 tsp. dried basil (or 2-3 leaves, fresh basil, torn) Spray the inside of your slow cooker with nonstick cooking spray. Or coat it with a bit of olive oil. Then add in all of the spaghetti noodles. Then pour in the jarred sauce. Next, add 4 cups of water. Instead of water, try using vegetable broth or beef broth for a kick of flavor. Give the spaghetti and sauce a gentle stir to coat the spaghetti noodles and to keep them from sticking together. Add in minced garlic, Italian seasoning, and basil. Then top with frozen meatballs. No need to stir these in. Just put them right on top. Cover and cook on low for about 5 hours. Stuffed Meatballs with Marinara Sauce 1 pound ground turkey meat 5 garlic cloves, minced, divided 1 egg 1/2 cup freshly grated Romano cheese 2 teaspoons Italian seasoning 2 teaspoons fresh parsley, chopped Salt and ground black pepper, to taste 1 cup whole wheat panko bread 1/2 cup lukewarm water 4 oz mozzarella cheese, cut into bite sized cubes (you can use 4 (1 oz) string cheese pieces, too) 6 tablespoons olive oil, divided 1 (28-ounce) can crushed tomatoes 1 teaspoon salt 1/2 teaspoon black pepper 1/2 teaspoon sugar 2 teaspoons Italian seasoning 1/2 teaspoon crushed red pepper flakes Preheat oven to 400. Line large baking sheet with parch- ment paper; set aside. Heat 4 tablespoons of olive oil in a large skillet over medium heat. Allow the oil to simmer (you want it very hot) while you prepare the meatballs. In a large bowl combine ground turkey meat, half of the minced gar- lic, egg, cheese, parsley, Italian seasoning, salt and pep- per, and panko. Slowly add the water, a few tablespoons at a time. The mixture should be very moist but still hold its shape when rolled into meatballs. Scoop one tablespoon of meat into a small ball. Press a piece of cheese in the center, then cover it with another piece of meat, roll to seal in the cheese. Repeat with all meat/cheese. Fry meatballs in batches in the hot oil, 2 minutes on each side.Place semi-cooked meatballs on prepared baking sheet. Once all meatballs have been panfried, place the baking sheet in the oven to bake for 10-12 minutes, or until they're cooked though. While the meatballs bake, make your marinara! Add remaining oil to the same pan the meatballs were in, then add the remaining garlic and sauté for one minute, or until the garlic is golden and fragrant. Add the crushed tomatoes, salt, pepper, sugar, seasoning and crushed red pepper flakes, mix well to combine. Simmer the sauce for 9 minutes, stirring occasionally. Season with additional salt and pepper to taste. When meatballs are done cooking, add them to the sauce, stir to coat, and serve! Serve with pasta, rice or crusty bread.
