English Trifle from Bert Smith of
Bert's Desserts, Petaluma
Ideal for presentation: A clear glass trifle dish
or deep, large clear glass bowl.
Ingredients
One angel food cake, your own recipe,
store bought or from a mix (Whole Foods
Markets makes a nice in-store angel cake)
2/3 cup whole milk
1 small package (3.4) ounces instant vanilla
pudding, your favorite brand
1 small container full-fat lemon yogurt, your
favorite brand
1 can sweetened condensed milk
1 small container Cool Whip, thawed, or same
amount of fresh homemade whipped cream
Fresh seasonal fruit to taste (at least 2 to
3 kinds), cleaned and cut into pieces if
necessary
How to make:
Tear angel food cake into large bite-size
pieces and set aside. Please note, if making
the angel cake from scratch, the cake should
be completely cool before you tear it into
pieces. Combine pudding, milk, yogurt and
sweetened condensed milk and stir until
blended. Fold in the Cool Whip or whipped
cream and set aside.
Take your trifle or glass bowl and layer as
follows: 1/3 cake, topped with 1/3 cream
mixture, then 1/3 fruit; repeat two more times
ending with the fruit on top.
Cover with plastic wrap and set in the
refrigerator for 24 hours before serving. This
is a great dessert to prepare for a large party
because you can do all the prep in advance
and it will be ready to go the next day. ■
