Handcrafted and brightly painted sea creatures are displayed along the walls in each room. Craig Gurganus of Beaufort is the artist behind the vividly painted creations. "Craig makes them by hand from old surf boards and other recycled material," explains Horne, pointing out a bright red lobster. Step to the back of the restaurant and you enter a cocktail area, complete with a mirrored-bottom bar, which offers up just about any type of beach drink you can imagine, including martinis, daiquiris, and cold beer. This congenial setting is a great place to unwind from the day's pressures and take pleasure in having time to relax. The cocktail bar may be the place to enjoy a drink, but the oyster bar is the place to partake in what makes 316 Oyster Bar out of the ordinary. The base of the bar is clear glass blocks with blue and green neon lights shining underneath, which gives it an aqua glow like light reflected off ocean water. Sitting on stools facing the bar, customers can order their oysters by the peck or half- peck. "They are steamed right in front of you," says Horne. The shuckers, dressed in crisp white shirts and hats shuck the oysters and serve them up on aluminum pie plates. "I love them," Horne admits. If you enjoy your oysters with a kick then you can become one of the brave and try 316 Oyster's original "Rooster." This may be easier said than done since the "Rooster" is not your ordinary oyster snack. A saltine cracker with an oyster on top is the base; a jalapeno pepper, one tablespoon of horseradish, black pepper and extra hot sauce top it off. Scores have taken the challenge and many have failed. But there are those who have been able to swallow three "Roosters" with pride. For their heroic feat, they are awarded a tee-shirt. "All kinds of people try the 'Rooster,'" says Horne. "We have ladies, older men, and young adults. It's fun to try and sometimes you are amazed at who can do it." Horne, who has been the general manager for twelve years, says he enjoys CityViewNC.com | 43 his work at 316 Oyster Bar mainly because of the customers. "I know a lot of the customers, being a native of Fayetteville. I get to see a lot of old friends and meet a lot of new ones." He is joined every night by his family in running the show. Wife Joyce greets customers each evening and his son, Rodney, runs the kitchen. Along with Brandon Galarza, the dining room manager, Horne says they keep the restaurant running smoothly. "Our goal is to make sure each customer is given the same individual attention as the person before them," Horne says. Serving between 500 to 600 hungry patrons on weekend nights, Horne and his employees have found a way to achieve that goal. Music by the Embers, pecks of oysters being shucked, colorful specialty drinks going by on trays, and that wonderful smell of fresh sea food and hushpuppies. It all adds up to exactly the effect Horne was aiming for. "Like you are at the beach even though you only left work an hour ago." CV
