With all the desserts and big meals we have had during the holidays, I believe a good bowl of soup or a nice casserole will give the cook in the kitchen some time off. I'm starting of the year by using the cookbook, "Recipes & Memories" from Second Baptist Church in Rutherfordton. Cream of Broccoli & Cauliflower Soup LILLIAN S. PHILLIPS gives us her recipe for Cream of Broccoli and Cauliflower Soup. This is a great reci- pe and we use it often. 2 10-ounce packages frozen chopped broccoli; 1 10-ounce package frozen cauliflower or 1/2 head fresh cauliflower separated into flowerets, or 1 10-ounce package frozen cau- liflower in cheese sauce; 2 cups chicken broth (in box or can); 1 cup half-and-half; 1 teaspoon salt; 1/2 teaspoon pepper; 2 cups grated Swiss cheese. In a 4 quart stockpot, cook the broccoli and cau- liflower in the broth until tender, about 5 minutes. Let cool. Puree in a blender or food processor, leaving the soup a little chunky. Return the soup to the stockpot. Add the half-and-half, salt and pepper. Let cool and refrigerate until party time. The next day, reheat the soup over very low heat for 45 minutes. Just before your guests arrive, stir in the swiss cheese. This soup will be on the request list from friends and family for a long time. It's great! Potato Soup Well, who doesn't like Potato Soup? BLANCHE SCOGGINS shares her easy recipe. 6 medium pota- toes peeled and cubed; 2 stalks celery, chopped fine; 1 small onion, chopped; 1/2 teaspoon salt; 1/2 teaspoon pepper; 1/4 teaspoon garlic powder; 1/2 stick butter; 1/2 cup milk; 2 tablespoons flour or cornstarch. Mix potatoes, celery, onion and seasonings together in large pot. Bring to boil, reduce heat and cook until potatoes are tender. Add butter. Combine milk with flour and stir well. Add to potatoes to thicken. stir until thickened and hearty. Top with parsley flakes, bacon bits, and cheddar cheese. Good recipe and great presenta- tion. French Onion Soup How long has it been since you had some French Onion Soup? Here is ROSE CONNER'S recipe. 4 cups thinly sliced onions; 1/2 stick butter; 1 quart liquid (1 pint chicken consomme & 1 pint beef con- somme); 2 tablespoons grated Parmesan cheese; 3 tablespoons sherry wine; 1 tablespoons worces- tershire sauce. Brown and cook onions in butter until done. Add liquid, Parmesan cheese, sherry wine and worcestershire sauce. Heat to boiling point. Serve with croutons or simple round rusk. Happy New Year!
