Melt butter and pour in 9 x 13 pan. Mix egg, flour, sugar, baking powder, salt, and milk. Pour over butter. Add strawberries and pieces of cream cheese. Bake for 45 minutes. Strawberry Cream Cheese Cobbler Rutherford Weekly Cooking By Allison Flynn North Carolina strawberry season is just around the corner, and it's never too early to start planning how to use the bountiful berries. Today's recipes come from the North Carolina Strawberry Association. 2 cups washed, crushed strawberries (start with about 1 qt whole berries) 4 cups sugar 3/4 cup water 1 box powdered fruit pectin (1 3/4 oz.) Place crushed berries into a large bowl. Add the sugar to the fruit, mix well, and let stand for 10 minutes. Mix water and pectin in a small saucepan, bring the mixture to a boil, and boil for 1 minute, stirring con- stantly. Remove from meat and stir the pectin into the fruit. Continue stirring for 3 minutes. Ladel quickly into serilized freezable jars, leaving ½ inch of headroom. Seal immediately with sterilized tight-fitting lids. Let jars stand at room temperature until the jam is set. Freeze. Makes 5-6 (8-ounce) jars. Freezer Strawberry Jam 1 pint fresh strawberries, diced 4 plum tomatoes, seeded and diced small onion, diced 1 small jalapeno pepper, minced 2 Tbsp. lime or lemon juice 2 cloves of garlic, minced 1 Tbsp. olive oil In a bowl, combine strawberries, tomatoes, onion, and pepper. Stir in lime juice, garlic, and oil. Cover and chill for 2 hours. Serve with cooked poultry or pork or as a dip with chips. Yield: 4 cups.
