Remove yolks to small bowl. Reserve whites. Mash yolks with fork. Add cheese, mayonnaise, sour cream and green onions; mix well. Spoon 1 heaping tablespoon yolk mixture into each egg white half. Refrigerate, covered, to blend flavors. Garnish eggs with chopped chives or minced green onions. Easy Deviled Eggs Rutherford Weekly Cooking By Allison Flynn 6 eggs 1/4 cup mayonnaise 1/2 teaspoon prepared mustard 2 tablespoons sweet pickle relish Salt and pepper to taste Cut eggs in half lengthwise. Remove yolks. Mash with a fork and mix with remaining ingredients. Mound mixture into egg whites. Sprinkle with paprika and/or garnish with a piece of pimento. Variations: Add any of the following ingredients to yolk mixture and adjust seasonings to taste: ham, onion, capers, pimiento, tuna, chives, mushrooms, spinach, nuts, olives, bacon, cheese, sour cream, jalapeños or salsa. Southern Deviled Eggs Deviled eggs are a common spring and summer side dish, and especially appropriate for an Easter meal. Today's recipes come from the egg experts - the North Carolina Egg Board! 14 hard-cooked eggs 1/2 cup mayonnaise 1/2 cup sour cream 1-1/2 teaspoons Dijon mustard 1 teaspoon fresh lemon juice 1/4 teaspoon pepper 1/3 cup crumbled bacon 1/4 cup finely shredded sharp Cheddar cheese 2 tablespoons chopped fresh chives or green onion tops Cut eggs lengthwise in half. Remove yolks to medi- um bowl. Reserve 24 white halves. Finely chop remain- ing 4 white halves. Mash yolks with fork. Add mayon- naise, sour cream, mustard, lemon juice and pepper; mix well. Add chopped egg whites, bacon, cheese and chives; mix well. Spoon 1 heaping tablespoon yolk mixture into each reserved egg white half. Refrigerate, covered, to blend flavors. Bacon-Cheddar Deviled Eggs Deviled Egg tips: - Deviled eggs can be made up to 12 hours ahead. Refrigerate, covered. - Hard-cooked eggs are easiest to peel right after cool- ing. Cooling causes the egg to contract slightly in the shell. To peel, gently tap egg on countertop until shell is finely crackled all over. Roll egg between hands to loosen shell. Start peeling at the large end, holding egg under cold running water to help ease the shell off. - No mess Deviled Egg method: Combine filling ingre- dients in 1-quart plastic food storage bag. Press out air and seal bag. Press and roll bag with hand until mixture is well blended. Push filling toward bottom corner of bag. Snip off about 1/2 inch of corner.
