Contact Allison Flynn at allison@rutherfordweekly.com to find out how your cookbook could be featured in our weekly column! ½ (15-ounce) pkg. refrigerated pie dough 1 cup packed brown sugar ½ cup unsweetened cocoa 1 tablespoon all-purpose flour ¾ cup 2% reduced-fat milk 1/3 cup light-colored corn syrup 1 tablespoon butter, melted 1 teaspoon vanilla extract 2 large eggs 2 large egg whites 1 cup frozen fat-free whipped topping, thawed ½ teaspoon unsweetened cocoa (optional) Preheat oven to 350°. Fit dough into a 9-inch pie plate. Fold edges under; flute. Place pie plate in freezer until ready to use. Combine brown sugar, ½ cup cocoa, and flour in a large bowl. Combine milk and next 5 ingredients (milk through egg whites); stir with a whisk until well blended. Add milk mixture to brown sugar mixture; until combined. Pour mixture into crust. Bake at 350° for 40 minutes or until just set. Cool on a wire rack to room tem- perature. Cover; chill at least 4 hours. Spread whipped topping evenly over filling; sprinkle with ½ teaspoon cocoa, if desired. Makes 10 servings. With Valentine's Day in the middle of the month, it's no surprise that February is National Chocolate Month. Chocolate may reduce heart disease risk as well as pre- vent memory decline. Chocolate Fudge Pie Rutherford Weekly Cooking By Allison Flynn 1 box (18.25 ounce) Devil's Food Cake Mix 1 cup fat free sour cream 1 cup 1% low fat or fat free milk 2 large eggs 2 egg whites or 1/4 cup egg substitute 3/4 cup kahlua liqueur * Coat the inside of the slow cooker dish with canola cooking spray. In large mixing bowl, combine cake mix, sour cream, milk, eggs, egg whites, and kahlua by beating on medium for about a minute. Pour cake batter into prepared slow cooker dish. Cover slow cooker and cook on LOW for 6-8 hours or on HIGH for 3-4 hours. Cut cake into about 16 wedges and using a cookie dough scoop, serve each slice with a small scoop of vanilla frozen yogurt if desired. Yield: Makes 16 serv- ings *Note: Can substitute strong coffee with a little cocoa added in place of the kahlua. Crock Pot Chocolate Kahlua Cake 2¼ cups all-purpose flour 1 cup oats, old fashioned or quick 1 teaspoon baking soda 1 teaspoon salt 1 cup (2 sticks) butter, softened ¾ cup granulated sugar ¾ cup packed brown sugar 1 teaspoon vanilla extract 2 large eggs 8 ounces semi-sweet chocolate chips 1 cup chopped walnuts Preheat oven to 375° F. Combine flour, oats, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets. Bake for 9 to 11 min- utes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Revelers anxiously await the appearance of the groundhog to fi nd out if they will be treated to an early spring or six more weeks of winter, depending on whether or not Phil sees his shadow. Punxsutawney Phil saw his shadow on Monday morning, predicting six more weeks of winter. For some, it is tradition to watch the 1993 fi lm "Groundhog Day," starring Bill Murray, on Groundhog Day. In the fi lm, Murray plays a weatherman who is asked to cover the Groundhog Day festivities, but fi nds himself stuck in a time vortex that causes the day to repeat itself over and over ad nauseum. Fans of the fi lm may be in for a treat, as rumors suggest that the movie will soon be gracing the stage. There's no word yet who will star in the stage version, but Danny Rubin will write the script and Tim Minchin, the composer behind "Matilda," will be working on the score. It's uncertain if investors will carry "Groundhog Day" to the Great White Way anytime soon, but there are hopes it will end up premiering in London or on Broadway in the future.
