26 | January/February 2015 most customers purchase two types of fi sh, Spots and Virginia Mullet, to fry during the winter. e supply of Spots usually comes in sometime in June and lasts until the end of December. e Virginia Mullet is defi nitely a seasonal fi sh for this market as it is only sold in the fall and winter months. What else should one eat with fi sh? ere are lots of sides to put with fi sh. Sun stated that it depends where a person is from. Most Southerners choose to have fi sh and grits, coleslaw or hush puppies as a side. Vegetables, such as collard greens and broc- coli, are some favorites. Janet said French fries and/or cornbread are also a very common side to put with fi sh. What are the owner's favorite meals? When asked what the owner's favorite meals were, there were very diff erent responses; but that is probably due to what each fi sh market sells. Sun and James said they enjoy Spotted Trout, Conch and Spots. Janet said Spots was a fa- vorite of hers, too; but also loves to eat fried Virginia Mullet. Will at Sunfi sh Market said his absolute favorite is the Florida Pompano. He said that if a person does not like fi sh, this type of fi sh would defi nitely change his or her mind. " e Pompano is exotic and tastes so incredibly amazing," said Will. He always adds seasoning and a couple of special sauces from his market to his Florida Pompano meal. The Writer Becomes a "Fish Fan" I had the opportunity to try Florida Pompano for the fi rst time. When I interviewed Will Randall at Sunfi sh Market, I told him how I wasn't a big fan of fi sh and I rarely eat it. He told me if he cooked Florida Pompano for me that it would change my mind. He was very generous in cooking some for me and putting it in a to-go box for me to bring home after the interview. I was nervous to try it, but I knew I had to and see if he was right. He added some seasoning to the fi sh and some sauces as dipping sides. I became courageous and took my fi rst bite – it was delicious! It was defi nitely different from other fi sh that I tried. It was rich in taste and soft compared to other fi sh that I've eaten. The side sauces made it full of fl avor. It is absolutely worth trying and I recommend stopping by Sunfi sh Market to purchase it! While there are fi sh oil supplements and other foods that can improve your health, it is always better to eat the actual fi sh to get the full potential of those health benefi ts. Janet Lee
