Remove the bacon, crumble, and set aside to use as a topping for the peas. Saute the onion in the bacon drippings until tender. Add the peas, diced tomatoes and green chiles, salt, chili powder, pepper and water. Cover and cook over medium heat for 45 minutes to 1 hour, or until the peas are tender. Add additional water, if necessary. Serve garnished with crumbled bacon. (The peas, it seems, represents coins while the greens represent paper currency.) If you'd like to test the theory, here are two recipes to get you started! Spicy Black-Eyed Peas 1-3/4 pound ham hocks, rinsed 2 bunches fresh tur- nip greens with roots (about 10 pounds) 1 tablespoon sugar Bring ham hocks and 2 quarts water to a boil in an 8-quart dutch oven. Reduce heat, and simmer 1-1⁄2 to 2 hours or until meat is tender. Remove and discard stems and discolored spots from greens. Chop greens, and wash thoroughly; drain. Peel turnip roots, and cut in half.Add greens, roots, and sugar to dutch oven; bring to a boil. First, discover the beauty of the Hickory Nut Falls trail at Chimney Rock at Chimney Rock State Park. Afterward, catch a shuttle at the Tunnel Entrance for a hike at Rumbling Bald, where you'll be treated to views of Lake Lure and see the progress being made as State Parks works to reroute this trail. Be sure to bring water and wear comfortable hiking shoes. Both hikes will be led by a Park naturalist or State Park Ranger and are considered moderately diffi cult. Cost included with Park admission. Naturalist Niche: Winter Birding Saturday, January 17; 10:30am-12pm Meet at Tunnel Entrance. Not all of our feathered friends fl y south for the winter! Colder months are an excellent time for birding; leafl ess trees and open viewsheds provide ample opportunity to observe birds that don't mind chilly temperatures.
