Cake: 1 box super moist white cake mix, mixed according to package instructions, 1/2 teaspoon red food color, 1/2 teaspoon peppermint extract, 4 chopped peppermint sticks White icing: 1 cup powdered sugar, 1 tablespoon milk or water, 1/2 teaspoon vanilla (optional) Decoration: Crushed candy canes or crushed hard peppermint candies (optional) Heat oven to 325 degrees. Generously grease and flour 12-cup fluted tube cake pan. Make cake batter as directed and pour about two cups batter into pan. In a small bowl, pour about 3/4 cup batter; stir in food coloring, peppermint extract and chopped peppermint sticks. Carefully pour pink batter over white batter in pan; then carefully pour remaining white batter over pink batter. Bake as direct don box or until toothpick inserted in center comes out clean. Cool 10 minutes. Turn pan upside down onto cool- ing rack and remove pan. Cool cake completely, about one hour. In a small bowl, mix icing ingredients; if needed, stir in additional milk, 1 teaspoon at a time, until smooth and spreadable. Spread over cake. Sprinkle with crushed candy. Makes 12 servings. Lori Spence The holidays just lend themselves to baking, don't they? This week's cookies and cake recipe comes from "That We May Live" from Mount Pleasant Baptist Church in Forest City. Candy Cane Cake 1/2 cup shortening, 1/2 cup sugar, 1/2 cup molasses 1/2 tablespoon vinegar, 1 egg, beaten, 2-1/2 to 3 cups flour, 1/4 teaspoon salt, 1/2 teaspoon soda, 1/2 teaspoon cinnamon, 1/2 teaspoon ginger Combine shortening, sugar and vinegar; bring to a boil. Cool. Add beaten egg. Sift dry ingredients and add to liquid mixture. Chill. Roll out onto a floured surface and cut to 1/4-inch thickness. Bake at 375 degrees for 10 to 12 minutes. Makes approximately 2 dozen gin- gerbread men. Johanna Morrison Gingerbread Men 1 cup soft butter, 1 cup brown sugar, 1 cup flour, 1 egg yolk Mix and spread into 9-by-13-inch pan, sprayed. Spread out crust in pan. Cook for 20 minutes in a 350 degree oven. Take out and put 6 Hershey candy bars on top of crust. Let stand for 3 minutes; spread over crust.
