Morgan's Chop House setting is all about relaxation with family and friends. The decor is soothing earth tones and subdued lighting. A trickling wall water fountain adds to the ambience. Hinshaw said there are no bright reds or other loud colors to fuel customer anxiety. On Saturday nights, starting at 7:30, there's live but soft music. The genre is mostly jazz, blues and acoustical guitar. Morgan's Chop House also provides a lounge offering cocktails and appetizers. With its comfortable, over-stuffed leather sofas, the lounge is an ideal spot to unwind with friends after a long day at work or while waiting for a table. The other side of the restaurant consists of a dining area with spacious seating where tables are placed far enough apart to ensure intimate dining. The menu consists of appetizers, salads, seafood, pasta, entrees, and, of course, desserts. Among the most popular meat dishes are the pork chops with various toppings. There's the apple walnut, the peach pecan and the raspberry almond. "They run a pretty tight race, those three," Hinshaw said. One of his unique meat dishes is a 12-ounce bone-in fillet. "People love it. You can almost cut it with a fork," Hinshaw said. His secret, he says, is simple. "Stick with quality, aged beef. We never skimp on that." He cuts his fillets daily and his bone-in cuts are done by a professional butcher. It's the philosophy of Morgan's to ensure there is something for everyone's palate. Generally, women patrons prefer the seafood dishes, which include pan-seared tuna with ginger shiitake cream sauce; crab cheese cake baked with roasted garlic, topped with crab and brie cream sauce; shrimp and grits; and pan-seared grouper over artichoke risotto. "A lot of women go for the seafood, especially the pan-seared grouper, but you can never really know what people will order," Hinshaw said. He recently introduced a 24-ounce T-bone.
