Buck Creek Baptist Church is in Chesnee, our good neighbor. Welcome to September! Sweet Potato Souffle I'm headed to the kitchen and am going to make a great dish - Sweet Potato Souffle. Most of us love sweet potatoes and this dish is got the taste and is very light! 1 quart smashed sweet potatoes; 1/4 teaspoon vanilla flavoring; 1/4 teaspoon salt; 1/2 cup brown sugar; 2 eggs beaten; 1/2 cup butter melted; 1/2 cup pecans; marshmallows (I use small). Combine first 6 ingredients and whip until light. Grease pan and bake at 350º until golden brown. Top with marshmallows and pecans; bake until melted. This recipe is compliments of Susan Wright. Tuna Casserole We all like to save money. The next thing I'm going to make is a very reasonable dish. It's very inexpen- sive and very tasty. Save money and time. Teresa Crow's Tuna Casserole. Double this recipe for a family size casserole. 1 small (7 ounce) can tuna; 2 cups crushed potato chips; 3 tablespoons milk; 1 can cream of mushroom soup; 2 hard boiled eggs, sliced. Break tuna into small pieces. Arrange in layers tuna, eggs, and 1 1/4 cups chips in baking dish. Combine milk with mushroom soup; pour over tuna mixture. Top with remaining chips. Bake at 350º for 30 minutes. Now how easy is that? (I've tried this with a small can of salmon and it works!) Veg-All Casserole If you enjoy a casserole with a crunch, you'll love the next one I'm going to make. Kay Dukes gives us this recipe. It's called Veg-All Casserole. 2 cans Veg- All (drained); 1 can cream of mushroom or cream of chicken soup; 1 can water chestnuts, drained and chopped; 1/2 cup mayonnaise; 1 cup chopped onions; 1/2 cup chopped celery. Topping: 1 sleeve of Ritz Crackers and 1 stick butter. Mix vegetables together with all other ingredients in a bowl and then pour into a 9 x 13 baking dish. Mix Ritz Crackers and butter and crumble over top. Bake at 350º for 30 minutes. Easy, simple and quick! Let's get cooking! Get in the kitchen and show the love!
