Paits like to keep things simple, serving basically just seven items on their "all day" menu. The featured item is the "Carolina Burger," a hearty slab of fresh hamburger topped with mustard, onions, chili and — of course — slaw. According to Woody, the place serves 260 pounds of hamburger a week. In addition to the hamburgers, they also sell a lot of cheeseburgers, hot dogs, fried bologna sandwiches and "Freedom Fries." The fried potatoes are named in hon- or of the local military and the bologna sandwiches are on the menu by popular demand. "We tried other things, barbecue sand- wiches, sausage dogs and other stuff, but the folks out here, they love their bologna sandwiches," explained Woody. The restaurant has a drive-through window and seats about 40 people. Don't come expecting white linens or fancy men- us: The only menu is the one on the wall that also advertises "chips and cookies, soft drinks, lemonade and sweet tea." Pait's Place is decorated with pennants from nearby Grays Creek High School and with cruise line posters promoting Kim Pait's other job as an independent travel agent. "She does a lot of cooking and book- ing," said Woody proudly. "She put her- self through college and she is one of the few professional Native American travel agents around." Woody also holds down another job. He has been with the Cumberland County Sheriff's Department for 27 years. They are careful to see that the restaurant does not interfere with either of their other jobs and they say they only opened it for "re- tirement reasons" some day in the future. For now, the two Paits juggle their schedules, using four or five employees to run the business, which is open from 10 a.m. until 6 p.m. Monday through Friday and from 10 a.m. until 4 p.m. on Saturdays. "We know you can't please everybody," said Woody. "But we honestly try our best. We enjoy serving people and getting to know people. We did not have any previ- ous experience in the restaurant business but we have learned and we love it. CV 26 | September/October • 2011 PHOTOS BY AWAKENING PHOTOGRAPHY
