Sometimes it doesn't take an extended vacation to recharge your batteries. A brief change of scenery and venue can make for quite the respite as well. Road trips also tend to be more affordable than longer getaways. If you have the benefi t of a tow hitch and a camper, you already have your accommodations. But even if you still need lodging, there are several budget motels that can fi t the bill for overnight lodging along your route. Here are some other road trip tips. * Before embarking, take out a map and plan your excursion. Stick to locations that are within reasonable driving distance from home. If you roam too far, you will spend more time behind the wheel than you will enjoying your destination. Locations no more than fi ve to six hours away should suffi ce. * Get your vehicle in road trip shape by ensuring it is in good working condition. If your car is scheduled for an oil change, get one before leaving. In addition, top off fl uids and be sure that tires are properly infl ated. * Stick to the scenic routes. While they may not save you travel time, avoiding interstates in favor of picturesque backroads will make for a much more relaxing and visually inspiring trip. Schedule rest stops so you can get out of the car and explore along the way to your destination. Taking backroads may also help you avoid some of your fellow weekend travelers. * Make your long weekend a Saturday through Monday affair. You may fi nd the roads are more congested Friday through Sunday. Simply starting your trip on Saturday and returning on Monday could save you the headache of driving in heavy traffi c. * Scope out low-cost activities at your destination. Many national parks are inexpensive and may only charge one fee per vehicle to enter. After Labor Day, many beaches no longer charge entry fees, making them an affordable option. Take advantage of cooler temperatures and picturesque scenery by planning an autumn weekend road trip. Down Home Cookin' Corn Pudding. 3 eggs, 1 cup milk, 4 tablespoons butter, 3 tablespoons flour, 1 16-ounce can cream style corn, 3 tablespoons sugar plus 1/2 teaspoon sugar, 1/2 teaspoon salt, 1/8 teaspoon pepper. In a saucepan melt butter. Add sugar, flour, salt and pepper. Remove from heat and add beaten eggs and corn. Place in greased 1 1/2 quart casserole dish. Bake at 325º for 1 hour, Sprinkle a little cinnamon and sugar over the top just before serving. Simple enough but better than good. It's always a pleasure to open "Moma's Mountain Cooking" cookbook compiled by Joy Oakley Gillespie in honor of her mother, Jan Pate Oakley. The recipes go way back in time and Joy had to figure out the portions on many because the way they were written. The cookbook is in it's fifth printing and is a joy to have on the cookbook shelf. Corn Pudding There you have it! Some good ol' time recipes. So "get in the kitchen and show some love". On the next page you will find a very good casserole dish. Reuben Casserole. Who doesn't like a Reuben sandwich. Well, here is a family casserole dish that you will enjoy. 1 can corn beef, 1/2 cup thousand island dressing, 1 can sauerkraut, drained, 6 sliced rye bread, cubed or crumbled, 1/2 pound Swiss cheese, grated, 1/2 cup butter, melted. Crumble corned beef into a well greased 12 x 8 inch glass dish. Spread dressing and then kraut. Cover with cheese. Toss crumbled bread with melted butter and sprinkle on top of casserole. Bake at 350º for 30 minutes or until hot! A neat take on a great favorite! Reuben Casserole SIDE MAIN I believe your family will enjoy this recipe for Chicken and Rice Casserole. 2 cups uncooked rice, 1 can cream of chicken soup, 1 can sliced mushrooms, 1 can cream of celery soup, 1 soup can of water, 1 small can evaporated milk, 2 1/2 pounds chicken, (I used frozen breasts), 1 onion, cut into rings, salt and pepper to taste, poultry seasoning. In the order given, place all ingredients in a 9 x 13 inch baking dish. Then put chicken in skin side up. Cover with foil. Bake in 350º oven for 1 1/2 hours. Uncover for the last 4 to 5 minutes to brown chicken.
