Rutherford Weekly's Favorite with M.A. ANDREWS The first is from MYRA DOWNEY. It's her Oven Fried Chicken. 1 teaspoon salt, 1/2 teaspoon onion salt, 1/2 teaspoon garlic powder, 2 eggs, beaten, 1 1/3 cup Aunt Jemima Pancake Mix, 2 to 2 1/2 pound frying chicken, cut up, 2 teaspoon paprika, 1/4 teaspoon pepper,m 1/2 cup milk, 2/3 cup butter, melted. Combine pancake mix, salt, paprika, onion salt, garlic powder, and pepper. Mix together milk and eggs. Dip chicken in milk mixture, draining off excess. Roll in pancake mixture. Place skin side down on wire rack in shallow baking pan. Brush with melted butter. Turn skin side up; brush second side with melted butter. Bake uncovered, without turning in preheated 375º oven for about 1 hour or until done. Unique and no grease. Healthier and easy. Try this. This week let's do some home cooking for good sup- pers! We are going to take Gray's Creek Baptist Church's "Homemade With Love" cookbook off my special cook- ing shelf and head to the kitchen. One is from my good neighbor, one from the pastor and his family and one from home. OVEN FRIED CHICKEN There you have some great suppers. What can I say, but "get in the kitchen and show the love". You and your family will definitely like this recipe. It's FRANCES MORROW'S Taco Bake. 1 (14-ounce package of Kraft deluxe macaroni and cheese din- ner, 1 pound ground beef, 1 package Taco Bell home originals taco seasoning mix, 3/4 cup water, 3/4 cup sour cream, 1 1/2 cup shredded cheese - divided, 1 jar Taco Bell Home Originals thick 'n Chunky Salsa. Preheat oven to 400º. Prepare maca- roni dinner. Brow and drain ground beef in pan, mix water and taco seasoning mix into meat. Stir sour cream into prepared dinner,. spoon half of the dinner mixture into 8 inch square baking dish. Top with layers of the meat mixture, 1 cup of cheese and remaining macaroni dinner mixture. Cover. Bake 15 minutes. Top with salsa and remaining cup cheese. Bake uncovered an additional 5 minutes or until cheese is melted. Dig in to a very good meal. TACO BAKE OVEN OVEN JANELL RUPPE shares her Skillet Casserole Dinner. I really like the ease of this recipe. Quick and very good. Most of the time is when it's cooking. 1 pound hamburger, 1 can tomato soup, 1 soup can of water, 1 can red kidney beans, 3/4 cup uncooked spaghetti, 1 cup celery, 3 medium potatoes, 1/2 cup onion, 3/4 cup uncooked rice, 1/2 bell pepper, 1 tablespoon Worcestershire sauce. Brown ham- burger meat, Break spaghetti into very small piec- es. Dice celery and potatoes. Add all ingredients to meat. Cook about 45 minutes on top of stove or bake in a buttered casserole dish for 1 hour at 375º. Note: I preferred the baking method. SKILLET CASSEROLE DINNER CASSEROLE Robert H. Resort towns cater to men, women and children who enjoy cascading along the fresh powder to test their skills on the slopes. Skiing is no longer relegated only to those resorts that have fresh snow. Resorts with the ability to manufacture snow can now cater to skiers regardless of the weather. Skiing can trace its origins to what is now Norway and Sweden. Cave paintings dating back to 5000 B.C. illustrate a skier with one pole in the Nordland region of Norway, while remnants of a primitive ski were found in Hoting, Sweden. The term "ski" was actually derived from the Norse word "skio," meaning "split piece of wood." It is generally believed skiing evolved from snowshoeing, and the ski poles were developed from the walking sticks snowshoers used for balance. Skiing was initially a method of effi cient transportation over the snow. The fi rst skis were likely similar to the cross-country skis used today. Skiing as a sport came much later, and it wasn't until the mid- to late-nineteenth century that downhill skiing developed. Various engineers created bindings that enabled skiers to ski without the risk of losing their skis. Sondre Norheim of Norway is credited as one of the fi rst developers of a downhill ski that enabled him to win the fi rst Norwegian downhill competition. Mathias Zdarsky and Hannes Schneider were two other innovators that made subtle changes to Norheim's designs, developing more modern skis and techniques. Skiing became more competitive when the fi rst slalom races took place in 1921 in Switzerland. Skiing was later included as a sport at the 1924 Winter Olympic Games in Chamonix, France, where ski jumping and cross-country skiing were introduced as events. Jacob Tullin Thams of Norway was the fi rst Olympic ski jumping champion. The silver medal was awarded to Narve Bonna of Norway and the bronze went to Anders Haugen of the United States.
