Special advertising section Shalimar Tandoor Grill and Bar M ost cities the size of Fayetteville have several restaurants that (L-R) Vatsal Naik, Luke Rozario serve gourmet Indian (as in, from India) food. Vatsal Naik, who goes simply by “V”, noticed that Fayetteville’s Indian dining options were limited — so he opened Shalimar Tandoor Grill and Bar with chef Luke Rozario. Rozario formerly worked for Ashoka, a five- star hotel in Delhi, India that was popular with members of the Indian Parliament, but left Delhi to open his own restaurant, Bombay Grill, in the SOHO area of New York City. Rozario’s experience is obvious in that Shalimar’s food is comparable in taste and quality to what you’d find in big cities like New York, London and San Francisco. As you might guess from the restaurant’s name, the secret to the authentically Indian, unique taste of Shalimar’s food is the tandoor, a special clay grill that is used to cook the meats, kabobs and vegetables. Shalimar’s staff also make naan, a delicious type of bread, in the tandoor. Shalimar has room for 60 people to eat in the fine dining area and 40 people in the casual area, where there is also a daily lunch buffet. The menu features traditional and gourmet cuisine and offers an upscale environment for discerning diners and an informal area for those who simply love delicious Indian food. Shalimar can accommodate private parties and provides catering for special events, as well. The restaurant is located on Raeford Road, just off the All American Freeway in the Dail Center.
