This weeks recipes are from "Good Eats from Buck Creek" cookbook. This is a great cookbook and I would recommend it for anyone who likes to cook. It's a must for cookbook collectors. APPETIZER Chicken Ball Let's get started with a great snack. From PAM TROUT we're going to the kitchen and make her Chicken Ball. 1 8-ounce package of cream cheese softened, 1 small can white chicken, 2 tablespoons celery, finely chopped, 2 tablespoons onion, finely chopped, dash of curry powder, dash of salt, pecans. Mix ingredients, except pecans, together very well. Make into a ball and roll into pecans pieces. Serve with crackers or chips. Great appetizer. I also like to make sandwiches out of this. very tasty. DIP Chocolate Chip Dip CHRISTI JACKSON offers us a very popular dip. Chocolate Chip Dip. 1 8-ounce Package of cream cheese softened, 1 stick butter, softened, 3/4 cup powdered sugar, 2 tablespoons brown sugar, 1/4 teaspoon vanilla, 3/4 cup mini chocolate chips. Cream together the cream cheese and butter; add rest of the ingredients. Put in refrigerator overnight. Roll into balls the next day. Serve with graham crackers. Sort of a s'mores dip! ONION RINGS Hot & Spicy Onion Rings Something very good and with some kick is the Hot and Spicy Onion Rings. Believe me these are really good. The recipe if from TERESA CROW. 6 cups oil, 1 1/2 cups milk, 2 large onions, cut into 1/2 inch thick rings. 2 cups all-purpose flour, 2 teaspoons salt, 1/2 teaspoon pepper, 1/2 teaspoon cayenne pepper. Heat oil in an electric deep fryer or large pot to 375º or until a bead cube browns in 1 minute. Combine milk and onions in a large bowl; stir well. Combine flour, salt, pepper, and cayenne pepper on a plate or a sheet of wax pepper. Coat onions in flour mixture, shaking off excess. Lower onions gently in hot oil with metal tongs. Fry, turning once, until onions are browned and crisp. Drain onions on paper towel line plate. Serve immediately.
