RAINBOW FRUIT SKEWERS (2 skewers) • 2 blackberries • 4 blueberries • 2 green grapes • 2 pieces kiwi • 2 pieces cutie oranges • 2 strawberries • 2 half skewer sticks For just 2 sticks of rainbow goodness, skewer fruit in that order (half the amounts per skewer), ending with the strawberry cut at the point of stick. Taste the rainbow, and make eating healthy visually fun for the kids. No skittles necessary! DIY PIZZA LUNCHABLES • 1 piece so naan or pita bread, cut into circles, shapes or wedges • ¼ cup pizza sauce, homemade or store-bought • ¼ cup shredded cheese, mozzarella or Italian blend • ¼ cup pepperoni or preferred toppings Cut crust, if using naan or pita into preferred size pieces or shapes (hearts or flowers are adorable). Place ingredients in separate compartments of the lunchbox so kids can build their own pizza at the lunch table. If you prefer it to be cooked for them, alternately, use a cookie sheet to build the pizzas, and bake 5 minutes at 450 degrees: sauce, cheese, toppings in that order. Be sure to pack utensils if they are creatively building their own (which kids love to do!) KALE PESTO CHICKEN QUESADILLAS • 2 small whole wheat tortillas • 1 tbl kale pesto - store-bought or homemade • 1/3 cup cooked chicken, cubed or shredded • ¼ cup mozzarella cheese shreds Heat a large skillet over medium heat. Lay tortillas on cutting board and spread pesto onto one side of each tortilla. Take one tortilla and sprinkle chicken and cheese on top. Layer the other tortilla on top of it, pesto side down. Place tortillas onto hot skillet, cooking 3 minutes per side, til golden brown or til cheese is melted. Let cool slightly and then cut into 8 wedges. Can be eaten room temperature when lunchtime arrives! Serve with some guacamole or sour cream on the side, and balance out the box w fresh fruit and cut veggies! cheese? Easy Alfredo sauce is one of my chef go-tos and you can build in other cheeses to amp it up. Just reduce 2 cups heavy cream by half, the night before, add half a stick butter and 1 cup parmesan with a tablespoon of garlic salt and whisk well to toss over any pasta. en you'll be dining like royalty in the break room the next day- but still having all the kid feels of a yummy meal from your childhood. Trust me; spreadsheets will just be more enjoyable aer this comfort dish! Back to the kids now…so without further ado - let's add some new recipes to their school lunches!
