With working-class roots in Medieval Europe, charcuterie
boards have become a rage across the United States. Beyond
its bounty of complementary cheeses and smoked meats,
charcuterie is an artful expression of good taste. For Nicole
Knotts of Fayetteville Technical Community College's culinary
arts program, who created the board above, and Lindsey Smith,
owner of The Charcuterie Chic, it's all a delicate balance.
