Savory WaffleS With Cheddar and ChiveS Serves 4 I absolutely adore a savory waffle, great for breakfast, brunch or even dinner. Top each serving with a fried egg and serve with a dollop of sour cream. is recipe makes eight or nine waffles in my waffle iron, which takes 1/2 cup batter per waffle, but you may prefer to eat two per person. 1 cup all-purpose flour 1/2 cup yellow cornmeal 1/4 cup cornstarch 1 tsp baking powder 1/2 tsp baking soda 1 tsp salt A few good grinds black pepper 2 cups buttermilk 2 large eggs 4 tablespoons butter, melted and cooled slightly 3 ounces extra-sharp cheddar, shredded 1/3 cup minced fresh chives • In a medium mixing bowl, stir together the flour, corn meal, cornstarch, baking powder, baking soda, salt and pepper. • In a small bowl or glass measuring cup, whisk together the buttermilk and eggs. Pour into bowl with dry ingredients and mix gently but thoroughly. Pour in the melted butter and stir to incorporate. en stir in the cheddar and chives. • Preheat oven to 200°F with a rack in the center. Preheat waffle iron to medium or medium-dark setting. (Waffle irons vary so test one.) Pour in as much batter as your waffle iron's instructions recommend and cook until golden. Gently remove each waffle from iron and place directly on oven rack. e waffles will still be slightly so when they come out of the iron but will crisp up on the outside and stay tender on the inside while they rest in the oven. • When all waffles are cooked and have had a couple of minutes in the oven, serve with fried eggs on top and a dollop of sour cream. Drizzle with balsamic reduction (not just the vinegar). is can be bought at the store easily in squirt bottles. Top with fresh basil leaves and feta crumbles. Great for breakfast, outdoor patio parties or your next contribution to the neighborhood barbeque. rainBoW Waffle iCe Cream SandWiCheS 2 celebrations for the bite of one! Serves 10 2 c flour 1 tbsp sugar 1 tbsp baking powder 1/2 tsp baking soda 1/2 tsp kosher salt 1 1/2 c buttermilk 2 large eggs 4 tbsp (1/2 stick) unsalted butter, melted 2 pt vanilla ice cream, soened Multicolored sprinkles, for coating • Whisk together flour, sugar, baking powder, baking soda, and salt in a bowl. Whisk together buttermilk, eggs, and melted butter in a separate bowl. Add buttermilk mixture to flour mixture, and stir just until incorporated. • Heat a round waffle iron. Spoon a heaping 1/2 cup of batter onto waffle iron and cook until light golden brown, 5 to 6 minutes. Transfer to a wire rack to cool. • Scoop ice cream onto half of the waffles, spreading evenly. Sandwich with remaining waffles, gently pushing ice cream out to the edges. Coat edges in sprinkles. Freeze until firm, 4 hours and up to 2 days. Cut each waffle into 4 triangles just before serving.
