By Erin Rowe Between Father's Day this month on the 21st, as well the First Day of Summer literally preceding it by a day, there's so much to celebrate in June. is is the time of year to dust off the camping gear from the garage, clean the barbeque grill, take a road trip or make Dad a much-needed appreciation breakfast. With ideas for all, you'd do well to have an outdoor barbeque brunch one Saturday or Sunday morning. Or just take Dad to the great outdoors and celebrate in nature with some great meals. ese are the summer things. So let's start off the season with gusto. Get outside and start cooking up these delicious and easy recipes for dad, summer and all the people you love this month. I personally dig this Camping Breakfast Skillet independent of whether your locale is along the Buffalo River or your own backyard. It's a simple and hearty meal perfect for a manly breakfast and ready in less than 30 minutes. e prep is simple, which is always best when camping, with just some cubing of pre-cooked deli ham and slicing of a few green onions. You'll want to cook over hot coals versus flames, using cookware, like cast iron skillets or Dutch ovens, designed for campfire cooking. You can also use a conventional stove or RV stove if you're "glamping" up the great outdoors! Eats Camping cuisine in the morning (Serves 4) What makes camping difficult from a culinary perspective can be the need for refrigeration with most ingredients in recipes. But not this one! It's gourmet enough, plus easy & non-perishable to the max. Enjoy! 4 servings just-add-water pancake mix, prepared according to package instructions ½ cup mixed nuts, roughly chopped 15 oz can peaches in heavy syrup, roughly chopped ½ cup brown sugar 1/8 tsp nutmeg ½ tsp cinnamon Non-stick cooking spray Drain syrup from peaches into small saucepan, mix in brown sugar, nutmeg, and cinnamon; cook stirring over medium heat until heated through. Remove from heat and add diced peaches. Let cool while making pancakes. Place nuts in nonstick skillet over medium heat till toasted, stirring frequently, being careful not to burn them. Remove from heat and chop nuts. In large mixing bowl, combine pancake mix and water as directed on package. Add half of nuts (reserving remaining ones for toping at service.) Use same non-stick skillet to cook pancakes over medium heat with non-stick cooking spray if needed. Pour batter into pan to form pancakes in the size you desire. When bubbles form and break, turn pancakes to ensure they cook thoroughly and brown. For serving, top pancakes with syrup and remaining toasted nuts.
