Ricotta Doughnuts (big batch) 3 cups flour 2 cups ricotta 4 eggs 3 tbl baking powder Pinch of salt 2 tbl vanilla Mix up all ingredients in a bowl and drop tablespoon full rounded dough balls into hot oil till golden. Roll finished hot doughnuts in cinnamon sugar and serve with strawberry gastrique or jam. Delicious! advises, "Just stay true to who you are on the plate – the food will speak for itself." He also constantly reminds his cooks, "ey send monkeys to space – don't worry, we're just putting burgers on plates here." But it's more than a burger when Chef Jeff puts a hand to it. e man's modest. Regardless he gets to joke and have fun with his employees, making any establishment he owns a pleasure to work for. He's even taking his employees on an all-expense team building trip to Colorado where they'll build an outdoor kitchen for a wedding catering there! Most chefs would not be so giving towards their team, or as Chef calls them "family!" "I wanna be one of the chefs that change the game in this industry. I don't want my guys to have to cook two jobs and miss families like I did. I wanna let my guys off on a Friday night to attend their daughter's ballet recital. My staff is my family – I gotta take care of them – I'm dad!" Chef recalls a friend of his who ran such a great restaurant he could take employees to Brazil or Italy once a year, "and when they came back they'd revise the menu and it would reflect what they experienced on their travels! We may just be starting with Colorado here, but I'd love to do that with my family at B-List." Further he shares, "I'm living proof that you can overcome the odds. I've done time in the past and I want to give everyone a chance to cook. Something I'd eventually love to do is to go into the prisons and teach guys basic culinary skills so that when they get out they can really have a skill to offer up to chefs." Guys like Chef Jeff Wetzel, that truly care for others and great food, just don't come along every day. is French Cowboy really is making a difference with every plate and person he touches.
