Preheat the oven to 400 degrees F (200 degrees C). Grease a baking dish with butter. 2. Cook ground beef and onion in a large, nonstick skillet over medium heat until beef is browned and onions are soft and translucent, 5 to 10 minutes. Add garlic and cook until fragrant, about 1 minute. Season with salt and pepper. Stir in 1/2 cup Cheddar cheese until well combined. 3. Remove from heat. Add ketchup, mayonnaise, pickles, and mustard. Transfer mixture to buttered baking dish and top with remaining 1/2 cup Cheddar cheese. 4. Bake in the preheated oven until cheese is melted, 7 to 10 minutes. Ultimate Low-Carb Zucchini Lasagna Ingredients • cooking spray • 1 ½ large zucchinis, thinly sliced lengthwise • 1 tablespoon olive oil • 1 pound ground beef • 1 ½ cups low-carb marinara sauce • 2 teaspoons salt, divided • 1 teaspoon dried oregano • ½ teaspoon ground black pepper • 1 (8 ounce) container ricotta cheese • 1 egg • ½ teaspoon ground nutmeg • 2 cups shredded mozzarella cheese, divided • ¼ cup grated Parmesan cheese Directions 1. Preheat oven to 375 degrees F (190 degrees C). Grease an 8-inch baking dish with cooking spray. 2. Pat dry zucchini slices with a paper towel to get rid of excess moisture. 3. Heat olive oil in a saucepan over medium-high heat. Add ground beef; cook until browned, 5 to 8 minutes. Add marinara sauce, 1 teaspoon salt, oregano, and pepper; simmer for 10 minutes. 4. Combine remaining 1 teaspoon salt, ricotta cheese, egg, and nutmeg in a bowl; mix well. 5. Make 1 layer of zucchini slices in the prepared baking dish. Cover with 1/2 of the sauce. Add another layer of zucchini slices. Spread ricotta mixture on top. Sprinkle with 1 cup mozzarella cheese. Add another layer of zucchini slices; cover with the remaining sauce and top with 1 cup mozzarella cheese and Parmesan cheese. Cover baking dish with aluminum foil. 6. Bake in the preheated oven for 30 minutes. Remove aluminum foil and bake until top is golden, about 15 minutes more. Easy Keto Korean Beef with Cauli Rice Ingredients • 2 teaspoons sesame oil • 1 pound lean ground beef • 3 cloves garlic, minced • ¼ cup soy sauce • 1 tablespoon coconut sugar • ¼ teaspoon ground ginger • ¼ teaspoon ground black pepper • 2 cups cauliflower rice • 2 tablespoons chopped green onions • 1 tablespoon sesame seeds Directions 1. Heat sesame oil in a large skillet over medium-high heat. Cook and stir ground beef and garlic in the hot skillet until browned and crumbly, 5 to 7 minutes. 2. Combine soy sauce, coconut sugar, ginger, and black pepper in a bowl; whisk until well combined. Pour over ground beef; simmer until the sauce thickens, about 3 minutes. 3. Serve over cauliflower rice. Sprinkle with green onions and sesame seeds. Cook's Note: To make cauliflower rice, grate cauliflower using a coarse grater or using the grater disc in a food processor.
