INgreDIeNTS
• 6 cups of kale
• 2 sweet apples
• 1 cup of carrots, shredded
• 1 Tbsp honey
• ½ cup olive oil
• 2 Tbsp red or white wine
vinegar
• ¼ cup Dijon mustard
• ½ tsp garlic powder
• 1 pinch salt
• 1 pinch of black pepper
instructions
1. Remove kale stems, and
tear leaves into small pieces (about ½
inch).
2. Dice apples into ¼ inch pieces.
3. Shred carrots using a grater.
4. In a large bowl, toss kale, apples, and
carrots together.
5. In a small jar pour vinegar, mustard,
honey, oil, garlic, salt and pepper.
6. Seal lid on the jar and shake vigorously
to combine.
7. Pour dressing on top of salad and
gently toss with tongs.
8. Serve immediately.

Sweet Potato Pizza
Prep Time: 10 mins
Cook Time: 20 min Serves: 4-6
INgreDIeNTS
• 2 sweet potatoes
• 1 Tbsp olive oil
• ¼ cup shredded mozzarella cheese
• Toppings of your choice (kale, peppers,
tomato)
• Pizza sauce (try our Easy Peasy Pizza
Sauce recipe!)
instructions
1. Set oven to 450°F.
2. Slice sweet potato into ½ inch thick
round pieces. This can be tricky, make
sure you have a sharp knife and ask
for help if you need it.
3. Coat sweet potatoes in oil.
4. Arrange them on a tray and bake for
15-20 minutes.
5. Remove the tray from the oven and
turn the broiler on.
6. Spread each sweet potato round with
about ½ Tbsp of pizza sauce.
7. Add veggies on top and then sprinkle
with cheese.
8. Broil for 3-5 minutes. Keep a close eye
on it, be careful not to burn them.
9. Remove from oven. Serve while still
warm, but not too hot!
You can also use Zucchini
or eggplant as the pizza base!

Kale Apple Salad
INgreDIeNTS
• 6 apples
• 1 medium beet
• 1 Tbsp water
• 1 tsp vanilla extract
• ½ tsp ground cinnamon
• pinch of salt
• 1 tsp lemon juice (optional)
Crumble topping:
• 1 cup rolled oats
• ½ cup whole wheat flour, or gluten free
flour
• ½ tsp ground cinnamon
• 1 tsp vanilla extract
• 2 Tbsp honey
• 3-4 Tbsp olive oil
• pinch of salt
instructions
1. Preheat oven to 325ºF.
2. Dice apples into 1/4 inch chunks and
peel and shred the beet.
3. Combine apples and beet with water,
vanilla, cinnamon, salt and a splash of
lemon juice if using. Set aside.
4. In a separate bowl, combine rolled oats,
flour, cinnamon, salt vanilla, honey, and
olive oil, then rub ingredients together
with your fingers until mixed. This is your
crumble.
5. Spread your apple mixture into a 9x9
inch baking dish.
6. Scatter the crumble over the top evenly.
7. Bake for 30-40 minutes or until the
crumble is golden.
8. Remove from the oven and let cool
before serving.
