(tHere's MoLd on MY CHeese?) desCriPtion: Bacteria, molds, and fungi, oh my! Cheese is a living thing inhabited by a microscopic world of organisms that serve important roles in creating and aging this food. in this class, Jessica Keahey, a certified cheese professional, will explore many of the different types of beneficial microorgan- isms commonly used in cheesemaking, along with their desirable functions and interac- tions. she'll also discuss undesirable microbes and their effects, as well as methods used by cheesemakers to avoid or mitigate their pres- ence. attendees will taste a variety of cheeses in which the beneficial microorganisms dis- cussed are used to create unique character- istics of appearance, aroma and flavor profile, and texture. if participant enrollment is less than 12, this will be held at sweet freedom Creamery shop in Bentonville, otherwise class will move to a fayetteville location. Cost of cheese materials is included in class fees. instruCtor: Jessica Keahey dAY/dAte: tuesday, 9/14/21 - (1) tiMe: 1:00 PM - 3:00 PM ForMAt: in-Person LoCAtion: sweet freedom Creamery Cost: $55.00 olli Member $70.00 non-olli Member YogA For HeALtHY Aging desCriPtion: it happens overnight. yes- terday everything was normal - all your er- rands were done with little effort, you planted pansies, picked up the grands for ice cream, cleaned out a closet, and helped your mate organize one section of the garage. But this morning you're sore all over. it's not an injury. your muscle strength is gone. you can't bend or twist without being very careful. you move more slowly because you are afraid of falling. standing up and sitting down resemble com - edy routines. your mind is still sharp - if you get a couple of naps in during the day! there is a solution for improving the body changes that come with aging. healthy aging requires one to systematically stretch and condition muscles that will protect the aging joints. the slow, exact movements practiced in yoga will enhance strength, eliminate joint stiffness, re - store flexibility and range of motion, improve agility, and improve balance. these key areas - strength, flexibility, agility and balance - are the foundations of healthy living and living with- out the morning shuffle of pain and stiffness. learn the yoga poses from a certified instruc- tor, viknisvari Willis, who teaches at the arkan- sas yoga Center and will guide your yoga ses- sions. Dress in clothing in which you can move freely. optional suggestions for participants to use in class are a yoga mat, yoga blocks, straps and a blanket or pillow. instruCtor: viknisvari Willis dAY/dAte: Wednesdays, 9/15/21 - 10/20/21 (6) tiMe: 10:00 aM - 11:30 aM ForMAt: in-Person LoCAtion: gv Cost: $55.00 olli Member $70.00 non-olli Member exPLoring CrYstAL Bridges: tour And CLose LooK desCriPtion: spend time with some favorite works of art at Crystal Bridges!
