Rutherford Weekly's Favorite with M.A. ANDREWS It's been a while but this week we are traveling to Sunshine Elementary School and using the second edition of "Cooking With Sunshine, Volume II". This is a great little cookbook from some dedicated and great people. Let's get started. DESSERT Yummy Dessert WIN 50 CA$H! $ I'm going to the kitchen and make some tasty desserts. First from DONALD M. CAMPBELL it's a Yummy Dessert recipe. 1 cup flour, 1 stick butter, 1/2 cup pecans, 1 package cream cheese, 1 cup powdered sugar, 1 large carton Cool Whip, 1 large box chocolate pudding, 1 tablespoons vanilla, 3 cups milk. Heat oven to 300º. In a 9 x 13 inch baking pan, combine flour, butter and pecans - press into pan. Bake for 15 minutes. Let cool. SECOND LAYER. combine cream cheese, 1 cup Cool Whip and 1 cup powdered sugar. Mix well. Put on top of cooled first layer. THIRD LAYER. Combine milk, chocolate pudding and vanilla. Put on top of second layer. Put the remaining Cool Whip on top of third layer. This recipe is "kid approved, five star". BARS Peanut Butter Fruit Bars MELANIE SMITH shares a great recipe. It's easy and can become very popular very quick. Peanut Butter Fruit bars! 1 1/2 cup natural style peanut butter. 1 cup honey, 1 cup chopped dried fruit, 5-6 cups dry flake type cereal. Combine peanut butter and honey in large saucepan. Bring to boil, stirring constantly. Remove from heat. Quickly stir in dry cereal and fruit. Mix well. Press mixture into buttered 9 x 13 dish. Cool. Cut into bars. Makes 24. Super good and super healthy. PIE Squash Pie Soon, there will be a lot of squash fresh from the garden. I can't let this good recipe be overlooked. BELINDA VAN DYKE shares her recipe for Squash Pie. 2 cups cooked squash, drained (I try not to overcook the squash, it gives your pie more character and taste), 2 cups sugar, 1 stick butter, 3 eggs, 1 tablespoon flour (any kind), 1/2 teaspoon salt, 1 tablespoon coconut flavoring (or any flavoring to your liking. I also like hazelnut), 1 tablespoon lemon or vanilla flavoring. Mix and put into two deep dish pie shells. Mixture will be real thin. Bake at 350º until brown, about an hour. (Note: I baked mine on the bottom shelf so the bottom crust would not be mushy.) There you have it for this week. Tip; These recipes, especially the first two, are great to get the kids into cooking.
