FEBRUARY 7-13, 2021 WhAt's Up! 47 Appetizer all-stars that score big with the home team Game day eats try theserecipes Baked Buffalo Chicken Dip Ingredients • 3 cups diced cooked rotisserie chicken • 2 (8 ounce) packages cream cheese, softened • ¾ cup hot pepper sauce • ½ cup shredded pepper Jack cheese • ½ cup blue cheese dressing • ½ cup crumbled blue cheese • ½ teaspoon seafood seasoning (such as Old Bay®) • 1 pinch cayenne pepper, or to taste • 2 tablespoons shredded pepper Jack cheese • 1 pinch cayenne pepper, for garnish Directions 1. Preheat oven to 400 degrees F. 2. Combine chicken, cream cheese, hot pepper sauce, 1/2 cup pepper Jack cheese, blue cheese dressing, crumbled blue cheese, seafood seasoning, and cayenne pepper in a large bowl. 3. Transfer chicken mixture to a 9-inch round baking dish and sprinkle with 2 tablespoons pepper Jack cheese. 4. Bake until lightly browned, 15 to 20 minutes. Remove from oven and garnish with cayenne pepper. Best Ever Jalapeño Poppers Ingredients • 12 ounces cream cheese, softened • 1 (8 ounce) package shredded Cheddar cheese • 1 tablespoon bacon bits • 12 ounces jalapeño peppers, seeded and halved • 1 cup milk • 1 cup all-purpose flour • 1 cup dry bread crumbs • 2 quarts oil for frying Directions 1. In a medium bowl, mix the cream cheese, Cheddar cheese and bacon bits. Spoon this mixture into the jalapeño pepper halves. 2. Put the milk and flour into two separate small bowls. Dip the stuffed jalapeños first into the milk then into the flour, making sure they are well coated with each. Allow the coated jalapeños to dry for about 10 minutes. 3. Dip the jalapeños in milk again and roll them through the breadcrumbs. Allow them to dry, then repeat to ensure the entire surface of the jalapeño is coated. 4. In a medium skillet, heat the oil to 365 degrees F. Deep fry the coated jalapeños 2 to 3 minutes each, until golden brown. Remove and let drain on a paper towel. Sheet Pan Nachos Ingredients • 1 pound ground beef (80% lean) • ¼ cup water • 1 tablespoon chili powder • 1 teaspoon ground cayenne pepper • salt and ground black pepper to taste • 1 (14.5 ounce) package tortilla chips • 1 (4 ounce) can sliced black olives • 1 (12 ounce) jar pickled jalapeño pepper slices (Optional) • 2 cups shredded Cheddar cheese • 1 (8 ounce) container sour cream • 1 cup salsa Directions 1. Set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a sheet pan with aluminum foil. 2. Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Mix in water, chili powder, cayenne, salt, and pepper. 3. Lay out tortilla chips on the sheet pan. Top with ground beef mixture. Cover with olives, jalapeño slices, and Cheddar cheese. 4. Broil until cheese is bubbly and golden brown, 3 to 5 minutes. Serve with sour cream and salsa for dipping.
