Page 8 - shelby shopper & info - 704/484-1047 Auntie Gale’s STRAWBERRY PIZZA There are so many different versions you can do with this recipe. For a Cherry Pizza, use the cherry Jell-O and a 20 oz. can Cherry Pie Filling. range pizza, use the orange Jell-O and a (24.5 oz.) jar Dole Mandarin orange slices; pineapple with the pineapple Jell-O. Just substitute the flavor of Jell-O for the kind of fruit you are using. 1 (16.5 oz.) roll Pillsbury Sugar Cookies dough, room temp about 45 minutes 1 (8 oz.) package cream cheese, softened 1 (8 oz.) Cool Whip, thawed 1 (0.3 oz.) sugar free strawberry Jell-O Enough strawberries to cover pizza - about 4 cups, halved Heat oven 350º - lightly spray 12 inch pizza dish with Pam cooking spray. Allow cookie dough to come to room tempera- ture about 45 minutes. Press dough into prepared pizza pan. Bake 20 minutes until golden brown; cool completely. beat cream cheese until smooth and then fold in Cool Whip topping and Jell-O until well combined. Spread cream cheese mixture over cooled crust and then top with halved strawberries. Serve or refrigerate. FRESH STRAWBERRY FREEZER JAM I like to make my jelly from the early spring strawberries; they seem to have a better strawberry flavor. 4 cups mashed ripe strawberries (measure after mashed) strawberry Delights 8 cups sugar 2 (1.75 oz.) packages Sure-Jell (Fruit Pectin) 1-1/2 cups water Makes 6 pints; wash and rinse containers. Prepare strawberries cutting off stems; place in a large bowl or pot, and then slice. Mash with a potato masher until well mashed, but leave some bits of strawberry pieces. Stir sugar into prepared fruit, mix well. Cover and let stand 2 to 3 hours stir- ring occasionally. In a medium size saucepan, whisk pectin with 1-1/2 cups cold water. Bring to a boil on high heat, stirring con- stantly. Boil 1 minute, stirring constantly; remove from heat and then pour into fruit. Stir 3 minutes until all the sugar is completely dissolved. Pour into containers, leaving 1/2 inch space to allow for expansion during freezing. Let stand at room temperature 24 hours until set. Refrigerate up to 3 weeks or store in freezer for up to 1 year. Thaw in refrig- erator. VALENTINE STRAWBER- RY CREPES This is a great Valentine’s dessert for someone special, but you can make it for any occasion! 1-1/2 cups all-purpose flour 1/2 teaspoon baking powder 1/2 teaspoon salt 2 tablespoons sugar 2 cups milk 2 tablespoons butter, melted 2 eggs Combine above ingredients and let set for several hours or over night. To cook crepes, sea- son a small skillet or crepe pan with melted butter. Pour a small amount (about 1/4 cup) onto the hot skillet and cook until brown on both sides. As you cook the crepes, stack and separate them with waxed paper until ready to fill. You can use and kind of filling you desire. I used the Comstock Strawberry Pie filling and then dust with powdered sugar. ANGEL LUSH CUPCAKES 1 pkg. (16 oz.) angel food cake mix 1 pkg. (3.4 oz.) Jell-O Vanilla Flavor Instant Pudding 2 cans (8 oz. each) Dole crushed pineapple in juice, undrained 1 cup thawed Cool Whip Topping 2 cups assorted fresh berries, (blueberries, raspberries, and sliced strawberries) Heat oven to 375º. Prepare cake batter as directed on pack- age; pour into 30 paper-lined muffin cups, filling each cup 2/3 full. Bake 12 to 15 min. or until tops are golden brown and cracks feel dry. Cool cupcakes in pans 10 min.; remove to wire racks. Cool completely. Mix dry pudding mix and pine- apple in medium bowl. Gently stir in Cool Whip; spread onto cupcakes. Top with berries.
