I think it's not too early to offer some good salad recipes. Into the kitchen I'll share these salad recipes. SALAD Broccoli Salad 1 5 6 Let's begin with a Broccoli Salad. This recipe if from JOYCE SPAKE. 3 stalks broccoli, chopped; 1 cup mayonnaise; 1/4 cup sugar; 5 tablespoons apple cider vinegar; 1/2 purple onion, chopped; grated cheese. Mix first five ingredients together in a bowl and refrigerate overnight. When ready to serve, sprinkle with grated cheese on top. SALAD Cornbread Salad 7 2 4 3 www.nealseniorcenter.org 1. JAN MOFFIT shares her recipe for Cornbread Salad. 1 8-ounce package of cornbread mix made according to directions; 4-ounce can chopped green chiles; 1/8 teaspoon oregano; pinch of sage; 1/8 teaspoon cumin. Add last 4 ingredients to cornbread mixture. Bake at 400º for 20-25 minutes. Chop fine. MAYONNAISE MIXTURE: 1 cup mayonnaise; 1 cup sour cream; 1 package ranch dressing. Mix all 3 ingredients together. ASSEMBLE: 1 cup chopped green pepper; 1 cup chopped green onions; 3 medium chopped tomatoes; 8-ounce shredded cheddar cheese; 10 strips bacon, fried and crumbled; 3 cans pinto beans, washed and drained; 2 cans whole kernel corn, drained. Layer 1/2 cornbread pieces, beans, mayonnaise mixture, corn, tomatoes, green peppers, green onions, bacon and cheddar cheese. Repeat layers with remaining ingredients. Refrigerate. SALAD 6. It's that good. Cranberry Salad! This is LILLIAN CALVERT'S recipe. 1 bag fresh whole cranberries; 2 oranges; 1 cup sugar; 1 #303 can crushed pineapple with juice; 1 cup pecans, chopped; 2 packages cherry Jello. Chop cranberries and orange, allowing juices to drain off. Let set at least 1 hour with sugar sprinkled over oranges and cranberries. Add pineapple, then pecans. Prepare Jello according to directions on package. Add Jello to other ingredients: chill. Some interesting and fun recipes this week. "Get in the kitchen and show the love!" See you next week.
